COOKING - My Favorite Healthy Lunch

BLACK BEAN AND SWEAT POTATO BURGER

I love this recipe so much. It is so so sweet and yummy and filing. 

RECIPE

Ingredients:
1/2 cup chopped onion
1/2 cup chopped celery
2 cloves garlic or 1 tbsp minced garlic
15 oz can of black beans rinsed and drained
1/2 sweet potato chopped into 1/2 inch pieces and boiled until soft (stick a fork through it)
3 tsp of water
2 tsp of paprika
1 tsp cumin
pinch of salt


boil potatoes until soft

While that is boiling chop up your veggies 
(I was out of celery and used sweet peppers for extra flavor)

Heat up some oil in a pan and put onion and garlic in once oil is hot. Cook until they are limp and start to brown a bit.

Brain potatoes once ready.

Put the cooked onion mix into a food processor or blender. 

Add the sweet potatoes and blend.

Transfer mic into a container and stir.

Add black beans a smooch into mix with a fork. 

**If you have celery insert it here**

Form a patty with the mixture to fit your bun.

Using the same pan as the onion place your patty in the pan brown both sides. 

Toast your bun and place your patty on it and enjoy!

*My favorite buns for this are the Hawaiian Sweet Rolls*
